What's on the Menu

We are huge menu planners. I have to say my dear husband actually talked me into it, and it is so the way to go. The only downside is on grocery day, we literally have nothing to eat.
So, the weekly menu isn't much of a stretch for us, but the whole food allergy thing is still a work in progress. So, we have to be a bit more specific and adventerous, but even with all the food allergies this is what's on the menu... Some good stuff I tell you.

The great news is Keaton can eat it too now, and we both love it.

Keaton and I are both enjoying this delicious brand of gluten free waffles and french toast sticks. They have regular products too, they are very naturally based and I look forward to eating these instead of eggo, etc after we aren't gluten, dairy and egg free.

Lunch

Amy's Organic is a lifesaver. They pride themselves on only using ingredients that you can say, and they are actually good compared to Lean cuisine or something else. The only catch, they are expensive at $4-5. But you get what you pay for, and if I went out to lunch it would cost more than that.


This week's dinners- mostly inspired by Pinterest
Salsa Verde Chicken (we subbed pork), this recipe was just "anh" for me, but it made lots and was made in the crockpot.

Chipotle Chicken and Rice
- this is a new favorite. If you have little ones watch the heat, but it is seriously SOOOOOOO good. We use instant rice to take like 20 minutes off the cook time.

Southwest Rice and Bean Salad

Lots of grilling!! But this BBQ ribs (we use spare) recipe we just keep coming back to.

Dessert: I almost forgot to mention this
I took an old Barefoot Contessa recipe and mixed it with one from Gluten Free Goddess.
The Apple Crisp combination recipe is actually a WONDERFUL, satisfying dessert. I've served it twice for guests even. And I made it up, I'm not proud or anything. :)

I don't plan on eating exactly like this forever, but I must say there's still alot of good stuff on the menu.

Guess Who's 7 months?


Keaton is.....


I know Keaton is actually well beyond 7 months now, but I made a post and somehow on accident it didn't save (even though google has autosave), and I was so sad that I didn't replace it for a bit. Those thoughts and words can never be said again, so it took me a little time to get over it. But, without further ado

At 7 months...
-You still love to eat, seriously our grocery bill has increased this last month. You eat like a person, not a baby.

- You got a top tooth.

- You figured out your little pincer grasp. You had figured out a modified version for slimy foods, and when I finally gave you gluten free cheerios for the first time, it didn't work cause they were dry. So, now you have 2 little maneuvers to feed yourself. I love seeing your little brain at work.

-You are getting more mobile. You've discovered rolling multiple times can get you where you want to be better than crawling, which just frustrates you. But you're getting close, I'm actually dreading the day, cause for now I can set you down and leave the room. But the next phase will be fun too.

- You are a great sitter now. I left you for like 15+ minutes sitting in your room yesterday while I was getting ready, and I kept peaking in thinking you might topple over, but you were just playing, and it was so cute.

- You are such a happy baby (unless you're hungry or sleepy), you just love to play and laugh.

-I was playing a disappearing game with you while you were in your high chair, and you were literally bending over backwards to see where I'd gone. You knew I was still down there, (you've figured me out). :O

-We had a little "biting" fiasco with mommy for a few weeks, but we are mostly past it now- thank God.

-Your skin is so much better! We have so much more knowledge to control it, and most days you look great, but I know the eczema is still there, cause you still scratch and scratch- even though I can't see any rash. We have to give you benadryl. :(

- You love to be read to, you love random objects (and putting them in your mouth, the more random the better), you loving running errands, you love your pacifier and sleepy pup, and of course you love mom and dad.

Right now you're just my little buddy, my partner in crime, we just look at each and smile like we have a secret between us, but we don't it's just love and I like it!

First Mama's Day

Yesterday was my first mother's day and a time to reflect on how much I love being a mom and how much more I probably could have done for my own mother growing up (especially on Mother's Day). Right now Keaton is just the perfect age, (not that other stages won't be great), but he knows me and loves me and just laughs and plays with us all day long- no complaining, no saying "no", no temper tantrums (well actually there's been one), but you get my drift. I know this stage has to end-- and I know God makes this stage to help you fall more in love with your little one, so your bond now can carry you through the "terrible twos. But I wish it could last forever.

Yesterday was a great day with Husby and baby bringing me some breakfast in bed (it was oatmeal, as noted in my what I can eat post) which isn't very special, but I didn't make it, so I'll take it! They also got me a few wonderful gifts (thanks to pinterest) and some ideas I had put there. And after church we ate Mexican for lunch my favorite.

What's on the Menu?

So, as most of you know Keaton has food allergies and since I'm the "milk lady"-- I have to give things up to make sure he doesn't break out like a kid who tripped on the ant pile.
So, what do we eat around here when you can't eat Dairy-Gluten-Eggs-Chocolate-Peanut Butter-Strawberries, and a few others things to name a few.

Well here's what's on the menu this week. Click for a closer look.


Breakfast:
Favorite baked oatmeal
(minus the chocolate)
Banana Muffins

Lunch: Corn Tortillas + Chicken and Guacamole

Dinner:
Pork Planks- an old favorite, now minus the bread.
Turkey kebabs and cabbage slaw
One pot chicken and sausage
Turkey Lettuce Wraps

Notice a dinner theme? Meat and veggies, not alot of other options. Actually three of those dinner meals are old favorites from Martha Stewart and that makes me happy. :)
